One Pot Thai Style Peanut Pasta is the 17th recipe in our Easy Meals for the New Year Challenge and the recipe of the day! This fantastic one pot meal comes from Apron Strings, and it originally appeared in our One Pot April challenge. While we’ve shared this recipe with you before, we think it is so good that it deserved a second feature!
This meal is excellent as a standalone dish. The creamy peanut sauce is spicy and comforting; just like thai food should be! If you are interested in adding a protein, I have served it with grilled chicken thighs marinated in ginger, garlic, lime juice, olive oil, soy sauce, and red chili flakes.

You’ll never forget to thaw meat or soak beans for your upcoming recipes ever again with Prep Notes! These notes are saved into your recipes, so when you plan it on your calendar, the note is automatically added! This can even be used for pre-chopping veggies, marinating chicken, or starting a loaf of bread. They are so easy to use and they remind you of the prep steps that are so easily forgotten during busy work weeks! This article will show you how to use them and add them to your recipes!
